Il est très simple de réaliser une brioche légère et moelleuse sans œuf, sans lait, sans beurre et sans robot pétrisseur. La preuve ci-dessous avec cette recette réalisable à l’aide d’un blender!


 Ingrédients

Pour la pâte
250g de farine de blé
140ml de lait d’amande
40ml d’huile de colza
30ml de sirop d’érable
15g de levure fraîche de boulanger
1 cuillère à soupe d’arôme vanille
3g de sel

Pour la dorure
2 cuillères à soupe de lait végétal
1 cuillère à soupe de sucre

  • Effriter la levure fraîche et la délayer dans le lait tiède. Laisser reposer 15 minutes.
  • Dans le bol d’un blender, verser tous les ingrédients en commençant par les liquides, puis mixer jusqu’à obtenir une pâte bien élastique.
  • Sur un plan de travail fariné, former une boule avec la pâte en ajoutant un peu de farine si elle est trop collante, puis la laisser reposer pendant 1 heure recouverte d’un torchon.
  • Dégazer la pâte en l’écrasant énergiquement, puis la séparer en plusieurs petits pâtons en fonction de la forme désirée ou du moule utilisé.
  • Recouvrir le ou les moules de papier cuisson et y déposer les boules de pâtes, légèrement espacées afin qu’elles puissent bien gonfler.
  • Laisser pousser la pâte recouverte d’un torchon pendant 2 heures environ. La pâte doit presque tripler de volume.
  • Préchauffer le four à 170°C.
  • A l’aide d’un pinceau, badigeonnez la pâte du mélange lait/sucre pour avoir une brioche bien dorée.
  • Enfourner pendant 20 à 25 minutes.
  • Sortir la brioche du four et laisser reposer une quinzaine de minutes avant de la démouler et d’enlever le papier cuisson.
  • Saupoudrer de sucre glace pour la décoration.
  • Déguster avec un peu de confiture ou de pâte à tartiner et une bonne boisson chaude!

Vous pouvez la conserver 24 à 48 heures au frais entouré de papier film! Veillez à la sortir un peu avant dégustation afin qu’elle retrouve son moelleux. Elle est également très bonne après un petit passage au grille pain.

  • In the bowl of a blender, add all ingredients, starting with the liquid and blend until you get an elastic dough.
  • On a floured surface, form a ball with the dough, adding a little flour if too sticky, then let stand for 1 hour covered with a cloth.
  • Knead the dough, then separate into small pieces of dough according to the desired shape or the mold used.
  • Cover the mold(s) with baking paper and add the dough balls, slightly spaced so that they can properly inflate.
  • Let it rise covered with a cloth for about 2 hours. The dough should almost triple his size.
  • Preheat oven to 170° C.
  • Using a brush, put the milk / sugar mixture on the dough to have a golden brown bun.
  • Bake for 20 to 25 minutes.
  • Remove the cake from the oven and let stand fifteen minutes before unmolding and removing the baking paper.
  • Sprinkle with icing sugar for decoration.
  • Enjoy with some jam or chocolate spread and a hot drink!

You can keep the brioche 24 to 48 hours in the fridge wrapped with cling film! When you remove it from the fridge, make sure to let it warm up a bit so it will be soft again. It is also very good after a short way in a toaster.
