Tartelettes au citron meringuéesLemon meringue mini-tarts

Récemment, la pâtisserie végétale a évolué suite aux découvertes publiées sur Revolution Végétale, blog qui explique de nouvelles méthodes pour obtenir des « blancs » végétaux. Nous avons donc créé une tarte au citron meringuée très simple à réaliser avec des blancs 100% vegan. Cette recette nécessite un thermomètre de cuisson et, dans l’idéal, un chalumeau de cuisine.


INGRÉDIENTS

Pour 4 tartelettes
Pour la pâte
125g de farine
40ml de lait de soja
40ml d’huile végétale
25g de sucre
1 pincée de sel

Pour la base au citron
150ml de lait de soja
1/2 cuillère à café rase d’agar-agar
1 cuillère à soupe généreuse de purée de cajou
Le jus d’un citron

Pour la meringue italienne
20g de gluten
70ml d’eau
Quelques gouttes de jus de citron
150g de sucre
35ml d’eau

Vous pouvez trouver très facilement le gluten en magasin bio.


PRÉPARATION de la pâte

  • Mélanger la farine, le sucre et le sel dans un saladier.
  • Fouetter le lait et l’huile pour obtenir un mélanger homogène puis l’incorporer progressivement au mélange farine-sucre-sel.
  • Former une boule puis l’enrouler dans du film plastique et la laisser reposer au frigo environ 45 minutes.
  • Préchauffer votre four en mode chaleur tournante à 180°C.
  • Sortir la pâte du frigo et l’abaisser au rouleau à environ 2mm d’épaisseur.
  • Disposer la pâte sur les moules à tartelettes (ici 105mm de diamètre) et la former afin qu’elle épouse parfaitement la forme du moule, piquer le fond avec une fourchette.
  • Écraser le dessus du moule avec un rouleau afin de vous débarrasser du surplus de pâte. Répéter l’opération avec les autres moules.
  • Enfourner les moules pour environ 15 minutes. La pâte doit être très légèrement dorée.
  • Une fois sortis du four, laisser refroidir les fonds de tartes à l’air libre.

PRÉPARATION DE la crème citron

  • Dans une casserole, ajouter le lait de soja et l’agar-agar, porter à ébullition à feu moyen puis laisser chauffer 2 minutes en remuant.
  • Sortir la casserole du feu et ajouter la purée de cajou et le jus de citron. Remuer jusqu’à obtenir une crème homogène.
  • Verser la crème dans les fonds de tarte et les laisser refroidir au frigo pour au moins 30 minutes.

PRÉPARATION DE LA Meringue

  • Dans un saladier, mettre le gluten et 70 ml d’eau, battre le mélange avec un batteur à main à puissance maximale.
  • Après environ 30 secondes, ajouter quelques gouttes de jus de citron et continuer à battre jusqu’à obtenir un blanc ferme, cela peut prendre plusieurs minutes.
  • Dans une casserole, faire chauffer à feu vif le sucre et 35 ml d’eau, surveiller la température.
  • Déposer le saladier contenant les blancs sur un saladier plus grand rempli de glaçons.
  • Lorsque le sucre atteint 120°C, le verser très doucement dans les blancs en battant à vitesse minimale.
  • Lorsque tout le sucre est versé, battre à vitesse maximale jusqu’à refroidissement complet du mélange.
  • Verser la meringue dans une poche à douille et la disposer sur les tartelettes selon votre motif préféré.
  • Faire dorer la meringue au chalumeau, attention a ne pas laisser la flamme trop longtemps car la meringue brûle très vite (quelques secondes suffisent).
  • Servir et déguster !

Recently, the vegan pastry evolved thanks to the discoveries published on http://www.revolutionvegetale.com/en/, a blog that explains new methods to obtain vegan « egg white ». We have created a very simple lemon meringue pie made with vegetal « whites ». This recipe requires a cooking thermometer and, ideally, a blowtorch.


INGREDIENTS

For 4 mini-tarts
For the dough
125g flour
40ml soy milk
40ml vegetable oil
25g sugar
1 pinch of salt

For the lemon base
150ml Soy milk
1/2 teaspoon of agar
1 tablespoon cashew butter
The juice of one lemon

For the Italian meringue
20g gluten
70ml water
A few drops of lemon juice
150g sugar
35ml water


DOUGH PREPARATION

  • Mix flour, sugar and salt in a bowl.
  • Whisk milk and oil to obtain a homogeneous mix and then gradually add to the flour-sugar-salt mixture.
  • Form a ball, wrap in plastic film and let rest in the refrigerator for about 45 minutes.
  • Preheat your oven in convection mode at 180°C.
  • Remove dough from refrigerator and roll it down to about 2mm thick.
  • Place the dough on the tart molds (here 105mm diameter) and form so that it perfectly fits the shape of the mold, prick the bottom with a fork.
  • Crush the top of the mold with a rolling pin to get rid of the dough excess. Repeat with the other molds.
  • Put the molds in oven for about 15 minutes. The dough should be slightly golden.
  • Once out of the oven, let the tarts cool.

LEMON CREAM PREPARATION

  • In a saucepan, add the soy milk and agar, bring to a boil over medium heat and let it heat for 2 more minutes.
  • Remove the pan from the heat and add the cashew butter and lemon juice. Stir until you get a smooth cream.
  • Pour the cream into tart crusts and let it cool in the fridge for at least 30 minutes.

Meringue preparation

  • In a bowl, add gluten and 70ml of water, beat the mixture with a hand mixer at high speed.
  • After about 30 seconds, add a few drops of lemon juice and continue beating until you get a firm white, it may take several minutes.
  • In a saucepan, heat over high heat sugar and 35ml of water, monitor the temperature.
  • Put the bowl containing white over a larger bowl filled with ice.
  • When the sugar reaches 120°C very gently pour it in the white beating at low speed.
  • When all the sugar is poured, beat on high speed until the mixture is cool.
  • Pour the meringue into a pastry bag and place it on the tarts in your favorite pattern.
  • Brown the meringue with a blowtorch, careful not to let the flame too long as the meringue burns very quickly (a few seconds is enough).
  • Serve and enjoy!
